Of all the Chinese, I personally feel that those from Hong Kong have the most discriminating taste buds. (could be biased, my roots don't fall too far from Hong Kong) Here are some recommendations from a friend of mine who's lived in Chongqing for the last three years and I can always count on him to know where the good eats are. Posting them here until I have the time to go through each and write complete listings.
1. Have u heard of 菜根香? it's like Wind 123 and TaoRanJu. it's a local joint and got a couple shops, one of them is in the center of Three Gorges Plaza
2. Another similar restaurant, kinda classy and sophisticated but on a smaller scale is called 寻常故事-家常菜. there's one at the Three Gorges Plaza, and another one near the JiangBei 北城天街/阳光城 area
3. the 干锅 places in YuanJiaGang is supposedly located "next to Chongqing 工学院 C Campus," remember that. costs about 20 per small pot, which feeds 2-3. lots of choices in terms of ingredients as well
4. 泰香米 is a thai restaurant. not very authentic, but it's different from local stuff, and seafood not too fresh either. it's a choice though, and does taste pretty good. price range is mid-high range
5. 铜锣湾茶餐厅 there's one at Three Gorges Plaza, and one across the street from 远东百货 in JiangBei. Lots of pretty authentic hong kong favorites like 海南鸡饭,番茄牛肉饭,煲仔饭 (the most violent dish, cuz you boil 煲 your son 仔), as well as CQ-HK fusions like 铁板黑椒鳝鱼饭. kinda modern bar atmosphere, but food feels like home.
6. 阿里与艾德 restaurants are located within the 立洋百货 in shapingba and 太平洋百货 in JFB. both chinese and western cuisine available, so you have lots to choose from, and pictorial menus as well! the spaghetti, mozarella sticks and pizza are horrible, and their ketchup is really sweet, but baked macaroni, sandwiches, and the korea-style tofu/beef/seafood and related sort of pots are decent. also have over-priced steaks (usually 40-100+, never tried the latter), which can temporarily satisfy your meat cravings
7. 豪客来 sizzling-platter steaks and pork chops and seafoods. also only able to provide short-term satisfaction. relatively cheaper in terms of the low range, but pricey ones also available (never tried those). they don't serve free water or traditional chinese tea, but this herbal/fruity tea drink which might induce gag reflexes on some (including mois). you have "one bowl" at the salad bar, so you will see locals stacking and packing and then drenching them in colorful and disgusting thousand island or yoghurt dressings. however, it gets busy at dinner time throughout the week and just go help yourself, especially if you don't speak chinese, they can't do anything about it. occasionally, they have this decent, flavorless potato salad, which you could spice up with mayo and sliced boiled eggs.
